No vacuum harvesters or similar machines are used during the harvest to protect the birds. After harvesting, the olives are immediately processed in the oil mill. The freshly pressed olive oil can then rest for a while until the suspended matter has settled. Only then is the olive oil bottled, unfiltered, around March.Greek organic olive oil in the kitchen Our high-quality organic extra virgin Peloponnese olive oil can be used in a variety of ways in the kitchen, but also in the bakery. For example, it is ideal for braising, stewing or frying. Vita Verde extra virgin Peloponnese olive oil can also be used as a substitute for butter in baking, for example.
